Bowl food is a big trend – with good reason. They’re easy to make, customizable and healthy. Here are two great options to try that are packed with protein and filled with healthy carbs and vegetables.

Spicy Tofu Bowl

Tofu
28 ounces firm tofu
4 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon minced garlic

1 teaspoon chipotle powder

Rice

2 bags whole-grain boil in bag rice

1 tablespoon olive oil

1 jalapeño, finely chopped

1 medium diced red onion

Beans

1 (15.5-oz) can black beans, drained and rinsed

1 tablespoon sour cream

Tofu:
Drain the tofu well. Line a plate with a paper towel, place the tofu on top, add another layer of paper towel and place something heavy on top. Press the tofu this way for 5-10 minutes. Cut into cubes. Whisk the remaining ingredients together until combined to create a marinade. Brush the marinade on the tofu. Place the coated tofu in the 400-degree oven and cook for 30 minutes, until tofu is slightly crispy.

Rice:

Cook rice according to package directions. Sauté vegetables until tender (about 5 minutes) in oil. Remove from heat. Combine and stir well.

Beans:

Add beans and sour cream to food processor. Pulse until well-mixed.

When you’re ready to serve, divide each section into quarters and place each item separately in a bowl. Garnish with Mama Flasch’s Gourmet Salsa.

Super Easy Bowl

2 boil in bags quinoa

1 avocado, pitted and sliced into long, thin strips

1 can asparagus spears

1 can sweet corn

8 ounces Mama Flasch’s Gourmet Salsa

Prepare quinoa to package directions. Heat asparagus in juice to boil, then simmer for 5 minutes. Combine salsa and corn in a small pan and cook for 5 minutes over medium heat. When you’re ready to serve, divide each section into quarters and place each item separately in a bowl.
