Do you practice Meatless Monday? Or maybe you’re just looking for new meal ideas? Either way, we know that incorporating more fruits, vegetables and whole grains into our diets helps us be healthier.

Although it’s recently grown in popularity, the Meatless Monday movement began as a way to conserve food during WWI and WWII. According to the Meatless Monday website, it was reintroduced in 2003 as a public health awareness campaign. “With the average American eating as much as 75 more pounds of meat each year than in generations past, our message of ‘one day a week, cut out meat’ is a way for individuals to do something good for themselves and the planet.”

Meatless Monday Recipes

We’ve gathered a few recipes for a meatless day that are centered around vegetables, whole grains and other types of protein. And of course we’ve included Mama Flasch’s salsa in each recipe. Breakfast Burrito

The great thing about burritos is that you can fill them with the foods that most appeal to you. They’re also nutritious and delicious. Start with a flour or corn tortilla. Choose one or more proteins such as scrambled eggs or beans, then add a variety of ingredients. Top with Mama Flasch’s salsa and you have the perfect meat-free start to your day! Here are some ideas for filling your burrito:

Quinoa

Rice

Potato chunks

Spinach

Cheese

Mushrooms

Hash browns

Here are two recipes that would be a great addition to your Meatless Mondays, submitted from our readers!

Cabbage Carrot Stew

Ingredients:

1 jar of Mama Flasch’s Gourmet Salsa (your choice on spice level!)

8 oz chicken stock, vegetable stock or water

carrots

mushrooms

parsley

garlic powder

½ head of cabbage

Add jar of Mama’s salsa to a large crock pot. Add 8 oz of chicken stock (vegetable stock or water can be substituted), mushrooms, carrots, parsley and garlic powder. Mix together. Place on stove on low heat. Cut half hear of cabbage in 1” or 2” squares and add to mixture. Cook and stir about every 15-20 minutes for at least 2 hours. The longer it sits, the better it tastes!  – Chris D.

 

Taco Chili

Ingredients:

1 small onion, chopped
1 (15.5 oz) can black beans
1 (15.5 oz) can kidney beans
1 (8 oz) can tomato sauce
10 oz package frozen corn kernels
1 (10 oz) can diced tomatoes w/chilies
4 oz can chopped green chili peppers, chopped
1 jar of Mama Flasch’s Gourmet Salsa (your choice on spice level!)
1 packet reduced sodium taco seasoning
1 tbsp chili powder

Directions:

Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, Mama Flasch salsa, chili powder and taco seasoning in a slow cooker and mix well. Cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours. Top with your favorite toppings such as shredded cheese or tortilla strips.  – Lisa M.
